Bean Itacates with Avocado Leaf

Prepare a delicious Mexican snack with our recipe for bean-filled itacates. This dish is made with corn dough and a filling with avocado leaf that is very easy to make.   • 2 tablespoons lard, for the filling
  • 1/4 onions, finely chopped for the filling
  • 3 árbol chiles, in slices for the filling
  • 2 leaves avocado leaves, for the filling
  • 1 1/2 cups black beans, cooked for the filling

  • 800 grams masa dough
  • 2 tablespoons lard, for the dough

  • lettuce, in strips to accompany
  • red salsa, to accompany

  • For the filling, heat the lard in a skillet over medium heat, brown the onion, add the árbol chili, the avocado leaf, the black bean, and cook for 10 minutes. Blend with salt and mix until you achieve a puree-like consistency. Set aside.
  • On a flat surface, place the corn dough, make a well in the center, and add the lard and salt; knead until all ingredients are incorporated. Set aside.
  • For the itacates, form a ball of dough, place it on plastic wrap, and using your hands, shape it into a circle. With a spoon, fill the circle with bean mixture and fold the tortilla in 3 parts to form a triangle; cook on a griddle over low heat for 8 minutes. Repeat until finished.
  • Serve the itacates on a plate and accompany with cream, cheese, lettuce, and red salsa.
