Beef birria is a very spicy broth, traditionally served with good corn tortillas, onion, cilantro, and lime juice. While many places specialize in its preparation, there's nothing like making a spicy beef birria at home; here’s how to do it!
6 guajillo chiles, cleaned and hydrated, for the marinade
2 ancho chiles, clean and hydrated, for the marinade
2 morita chiles, cleaned and hydrated, for the marinade
1 teaspoon pepper, for the marinade
1 teaspoon oregano, for the marinade
1 teaspoon cumin, for the marinade
2 cloves, for the marinade

1/4 cups onion, finely chopped, for serving
1/4 cups cilantro, finely chopped, for serving

Place the meat in a bowl and season with salt and pepper. Set aside.
For the marinade: Blend the tomato, garlic, onion, guajillo chili, ancho chili, morita chili, pepper, oregano, cumin, clove, water, and season with salt.
Place the meat in a pressure cooker, pour in the previously strained marinade, and add the bay leaves. Season again with salt, cover with water, mix well, close the pot, and cook the beef birria for 40 minutes.
Serve the beef birria in a deep clay dish and accompany with onion, cilantro, lime, and a delicious Sidral Mundet® Apple-Peach flavor.
