  • 1 garlic head
  • 1/2 onions
  • 1 teaspoon oregano
  • 6 allspice berries
  • 7 cloves
  • 2 tablespoons cumin
  • 3 cups water
  • 2 bay leaves
  • 3 cups water
  • coarse salt
  • 1 kilo beef head
  • 3 tomatoes
  • 1/4 onions
  • 3 árbol chiles
  • 1/4 cups chicken broth
  • salt and pepper
  • 6 guajillo chiles
  • corn tortillas
  • onion, finely chopped
  • cilantro, finely chopped
  • lime
  • Sidral Mundet® Apple flavor

  • Blend the head of garlic, onion, oregano, allspice, cloves, cumin, and water until everything is well integrated.
  • Place the previous preparation in a steamer and add the bay leaves, the rest of the water, and salt. Add the head, cover, and cook for 5 hours or until well cooked. Check the head from time to time to ensure the water doesn't run out.
  • For the sauce: roast the tomatoes, onion, and chiles and blend with the chicken broth, salt, and pepper.
  • Serve the beef head tacos, add onion, cilantro, lime juice, and sauce. Enjoy with Sidral Mundet® Apple flavor!
