Add the corn flour, wheat flour, vegetable oil, baking powder, salt, and water in a bowl. Mix with your hands until you get a moist and manageable dough. If you feel the dough is still dry, you can add a little water.
To form the tortilla: Make small balls a little smaller than the palm of your hands and flatten with a tortilla press.
Then, place a baby cactus on the edge, add the cheese, and roll it like a taco. Repeat the same process until the dough is finished.
Pour enough oil into a pan over medium heat, and once hot, start frying the rolls. Cook the cactus rolls for 3 minutes on each side or until the dough is well cooked. Remove from heat and place the rolls on paper towels to remove excess fat.
Plate the cactus rolls, serve with red sauce, and sprinkle with fresh cheese. Enjoy!
