Cactus Rolls

This cactus roll recipe is very easy to prepare! Moreover, it is also a nutritious option, as cactus provides a good amount of vitamins and minerals.

  • 4 cups corn masa flour, for the dough
  • 1 cup wheat flour, for the dough
  • 1/2 cups vegetable oil, for the dough
  • 1 teaspoon baking powder, for the dough
  • 1 teaspoon salt, for the dough
  • water, for the dough
  • 6 baby nopales, cooked
  • 1 cup adobera cheese, in not very thin slices
  • vegetable oil, for frying
  • red salsa, for serving
  • 1/4 cups queso fresco, shredded, for decoration

  • Add the corn flour, wheat flour, vegetable oil, baking powder, salt, and water in a bowl. Mix with your hands until you get a moist and manageable dough. If you feel the dough is still dry, you can add a little water.
  • To form the tortilla: Make small balls a little smaller than the palm of your hands and flatten with a tortilla press.
  • Then, place a baby cactus on the edge, add the cheese, and roll it like a taco. Repeat the same process until the dough is finished.
  • Pour enough oil into a pan over medium heat, and once hot, start frying the rolls. Cook the cactus rolls for 3 minutes on each side or until the dough is well cooked. Remove from heat and place the rolls on paper towels to remove excess fat.
  • Plate the cactus rolls, serve with red sauce, and sprinkle with fresh cheese. Enjoy!
