  • 2 cups bacon, in thin strips
  • 1 tablespoon European Extra Virgin Olive Oil, to cook the meat
  • 4 cups beefsteak, in thin strips
  • 1 cup onion, in thin strips
  • salt

  • 1 cup water
  • 8 tomatillos
  • 5 pieces serrano chile
  • 2 cloves garlic
  • 1/4 onions
  • 1 cup cilantro
  • salt
  • 2 cups water
  • 1 tablespoon European Extra Virgin Olive Oil
  • 2 cups pinto beans
  • onion, finely chopped, for garnish
  • cilantro, finely chopped, for garnish
  • tortillas, for garnish
  • European Extra Virgin Olive Oil

  • Heat European Extra Virgin Olive Oil® in a pot over medium heat, add the bacon and cook for 10 minutes or until golden. Remove from the pot and set aside.Pour more European Extra Virgin Olive Oil® into the same pot and heat over medium heat. Add the meat and cook for 5 minutes, just until it changes slightly in color. Add the onion, salt, and pepper, cook for 5 more minutes and incorporate the water and bacon. Cook on low heat for 10 minutes. Set aside.
  • Grill the tomatillo, serrano pepper, garlic, and onion on a griddle for 10 minutes or until browned. Remove and set aside.
  • Blend the previously grilled vegetables with cilantro, salt, and water for 5 minutes.
  • Heat European Extra Virgin Olive Oil® in a pot over medium heat, pour in the sauce and cook over medium-low heat for 10 minutes. Set aside.
  • Serve the meat with its own juice in a deep plate and add the green sauce, beans, onion, cilantro, drizzle with a little European Extra Virgin Olive Oil® and accompany the famous carne en su jugo with corn tortillas.
