  • water
  • 1 jar Doña María® Mole
  • 1 kilo lard
  • 1 kilo pork tenderloin
  • 1/2 garlic heads
  • 4 allspice berries
  • 2 bay leaves
  • 2 cloves
  • 4 slices orange
  • 1/2 cups orange juice
  • salt
  • 10 sopes
  • pickled onion

  • Heat Mole Doña María® in a pot over low heat for 5 minutes, stirring continuously until a lighter consistency is achieved. Then, gradually add water and continue stirring until incorporated. Let it boil until the mole reaches the desired consistency.
  • Place the lard in a pressure cooker and add the pork loin, garlic, pepper, bay leaf, cloves, orange, orange juice, and salt. Cook for 30 minutes or until the meat is ready.
  • Fry the sopes in a skillet with enough oil for 3 minutes on each side.
  • Spread a sope with a little Mole Doña María®, add the carnitas and drizzle with a bit more Mole Doña María®. Decorate with pickled onions.
