Catrina Chicken Quesadillas

  • 2 tablespoons vegetable oil
  • 1 cup onion, in thin strips
  • 1 tablespoon clove garlic
  • 1/2 cups serrano chile, in slices
  • 2 cups Constellation®, 283 g Day of the Dead
  • 2 cups chicken breast, cooked and shredded
  • salt and pepper
  • 4 flour tortillas, tortillas
  • 1 cup Manchego cheese, shredded
  • deli ham, sliced
  • American cheese, sliced

Low
  • Heat the oil in a pan over medium heat, add the onion, garlic, and serrano peppers, and cook for 2 minutes. Add the Constellation® tomatoes and cook for 5 minutes. Then, add the chicken, season with salt and pepper, and cook for 2 more minutes. Set aside.
  • Place two tortillas on a tray, add some chicken and cheese, and top with another tortilla. Bake for 10 minutes at 180 °C or until the cheese melts.
  • Cut the ham into circles, halve them, and set aside. Cut the yellow cheese with a flower-shaped cutter and in drops. Cut the salami into flower shapes using a cutter. Cut the Constellation® tomatoes in half and flip them, forming a heart when joined. Set aside.
  • Place the quesadilla on a plate and decorate with the ingredients to form the Catrina: make the eyes with cucumber and decorate the outline with half circles. Use the heart of the Constellation® tomato for the nose, use corn to form the teeth, and create flowers with salami, decorating with peas and yellow cheese.
