Chambarete in green sauce

  • 1 kilo beef shank
  • 1 onion
  • 1 garlic head
  • salt
  • 1 kilo tomatillo, roasted, for the green sauce
  • 3 serrano chiles, roasted, for the green sauce
  • 1 clove garlic, roast, for the green sauce
  • 1/4 onions, roasted, for the green sauce
  • 3 cups beef broth, for the green sauce
  • 1 teaspoon cumin, for the green sauce
  • 1/4 bunches cilantro, for the green sauce
  • 2 cups potato, cooked and cut into quarters
  • tortillas, to accompany

  • In a large pot, place the chambarete, water, onion, garlic, season with salt and cook for 90 minutes. Set aside.
  • For the sauce: blend the tomatoes (tomatillos), serrano chili, garlic, onion with the beef broth, add cumin, cilantro and season to taste.
  • In a medium skillet, add a little oil, sauté the meat for 5 minutes, pour in the sauce and cook for 10 minutes on low heat, add the potatoes and cook for 5 more minutes. Adjust seasoning.
  • Serve the meat with potatoes and accompany with warm tortillas to make tacos. Pair with the delicious flavor of Del Valle Frut® Citrus.
