Charales are small fish that are dried in salt for consumption; they are very tasty and economical, traditionally found during Lent. They are a perfect substitute when your family is tired of eating meat. Try these delicious charal fritters.
Remove the heads from the charales before cleaning them; since they are preserved in salt, we need to rinse them in clean water until the excess salt is gone. You will notice that when the salt is removed, the charales will become soft.
Once the charales are clean, dry them well before frying. Fry them until golden brown.
Beat the eggs and add the charales, mix well; you won’t need to add salt as the charales will provide enough. Add epazote for flavor.
Take portions of the mixture and form fritters. Fry them, then place them on absorbent paper to remove excess fat.
