Chicharrón in Green Sauce with a Touch of Avocado

  • 300 grams pork rinds
  • serrano chile
  • 1 kilo tomatillo
  • 1 avocado
  • 1 liter water
  • 1/2 onions
  • 1 clove garlic
  • 2 sprigs parsley
  • salt
  • 1 cube granulated chicken bouillon
  • olive oil

  • In a pot, cook the green tomatoes along with the chiles, onion, and garlic clove. Let it boil for about 5 minutes.
  • Remove the seeds from the chiles.
  • Place the tomatoes, onion, garlic, chiles, parsley, and avocado in the blender with a little of the cooking water. Blend until all the ingredients are integrated.
  • Add a tablespoon of olive oil to the saucepan, heat over high heat, add the previous sauce and mix well, lower the heat and let it simmer for 10 minutes.
  • Add the chicharrón in pieces into the sauce. Mix well and serve hot.
