Chicharrón Torta

  • 2 cups nopal, in strips
  • water, to cook the nopales
  • salt, to cook the nopales
  • 2 tablespoons white vinegar, to cook the nopales
  • 1/2 cups red onion, finely chopped
  • 1 cup tomato, in small cubes
  • 1/4 cups Jalapeño chile, in small cubes
  • 1/4 cups cilantro, finely chopped
  • 1/2 cups lime juice
  • 1/4 cups olive oil
  • salt
  • 6 slices panela cheese
  • 2 cups pork rinds, with meat
  • red salsa, mashed
  • 6 bolillo rolls, in half

  • Cook the nopales in a pot with enough boiling salted water and vinegar for 10 minutes. Remove and let cool.
  • In a bowl, mix the nopales, red onion, tomato, jalapeño pepper, cilantro, lime juice, olive oil, and salt. Set aside.
  • Take a bolillo, fill it with the nopales salad, panela cheese, chicharrón, and red sauce.
  • Enjoy this torta filled with chicharrón and pair it with your favorite drink.
