Add the chicken breast, onion, cilantro, and salt to a pot with enough water. Cook the chicken over medium heat for 30 minutes. Remove the chicken breast and shred. Set aside.
Pour enough vegetable oil into a pan to fry the tortillas. Add the tortillas one by one and fry for 5 minutes or until lightly golden. Remove from the oil and place on a plate with absorbent paper. Set aside.
For the sauce: Blend McCormick® Guacamole Flavored Mayonnaise Dressing, onion, serrano chili, cream, chicken broth, and cilantro for 5 minutes or until smooth. Set aside.
Pour the blended sauce into a pot and heat over medium heat for 2 to 4 minutes, just to warm it up. Set aside.
Place a tortilla on a board, fill with chicken, roll up like a taco, and arrange in a baking dish. Make several enchiladas and cover with guacamole sauce.
Serve the chicken enchiladas with guacamole sauce in the same baking dish and sprinkle with fresh cheese. Garnish with cilantro, radish, and serrano chili, enjoy!
