For mole lovers, we offer you a super original recipe to enjoy it in a different way: delicious pizza made with puff pastry topped with Doña María® almond mole ready to serve, shredded chicken, cream, cheese, red onion, and corn.

1 cup chicken, shredded and cooked
1/4 red onions, small, sliced
1/4 cups white corn kernels
1/4 cups yellow corn kernels
1 cup asadero cheese, grated
sour cream, for serving
fresh cilantro, for decoration

Preheat the oven to 200°C.
On a floured surface, and with the help of a rolling pin, roll out the puff pastry to a thickness of 3 mm. Cut it to the size of a 30 cm diameter pizza tray.
Place the Oaxaca cheese on the edges and wrap it with the dough, sealing with a bit of egg to form the cheese edge. Brush with more egg and sprinkle with sesame seeds.
Place the pizza on the tray, poke the center with a fork to prevent it from rising, and place parchment paper and a smaller tray in the center, ensuring it does not crush the edge. Bake for about 20 minutes or until golden.
Remove from the oven and place the Doña María® almond mole ready to serve in the center, along with the chicken, onion, corn, and cheese. Bake for an additional 5 minutes or until the cheese melts.
Decorate with sour cream and fresh cilantro, cut into slices, and serve.
