Chilaquiles with Chorizo in Bean Sauce

  • 3 cups black beans, cooked and with broth

  • 1/4 cups chipotle chile in adobo sauce
  • 1 sprig fresh epazote
  • 1/2 teaspoons ground cumin
  • 1 teaspoon salt

  • 1 tablespoon vegetable oil
  • 2 cups Northgate® pork chorizo, crumbled
  • 4 tablespoons onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 6 cups Northgate® chilaquiles chips
  • 4 tablespoons sour cream
  • 1/2 cups queso fresco, in cubes
  • 1/4 onions, sliced
  • 1 avocado, in cubes

  • For the sauce, blend the beans with the onion, garlic, tomato, sour cream, chipotle pepper, epazote, cumin, salt, and pepper until you have a smooth sauce.
  • Heat the oil in a pot over medium heat and fry the bean sauce for about 10 minutes or until thickened. Adjust seasoning and set aside.
  • In a skillet over medium heat, fry the Northgate pork chorizo until golden, add the onion and garlic, and cook for 5 more minutes. Set aside.
  • Place 1 ½ cups of Northgate chilaquiles chips on each plate and drizzle with the bean sauce, add some fried chorizo on top, and serve with sour cream, fresh cheese, red onion, and avocado.
