  • 1/4 cups onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 3 cups chilorio
  • 4 flour tortillas
  • 1 1/2 cups cheddar cheese, grated
  • vegetable oil, for frying
  • 1/2 cups red onion, sliced, for the pickled onions
  • 1/8 cups balsamic vinegar, for the pickled onions
  • 3 tablespoons orange juice, for the pickled onions
  • oregano, for the pickled onions
  • salt, for the pickled onions
  • pepper, for the pickled onions

  • Heat the oil in a pan over medium heat. Sauté the onion and garlic for 3 minutes or until they start to turn golden. Add the chilorio and cook for another 7 minutes or until it begins to brown slightly. Remove from heat and set aside.
  • Take a flour tortilla, fill it with chilorio and cheddar cheese, and roll it up.Heat a pan with oil over medium heat and fry the chimichangas for 3 minutes or until golden brown. Remove from the pan and set aside.
  • In a bowl, mix the onions, white vinegar, orange juice, oregano, salt, and pepper.
  • Serve the chimichangas and garnish with cream, guacamole, and pickled onions. Pair with Sidral Mundet® Apple Flavor!
