Cochinita Panuchos Recipe

  • 2 kilos pork leg, in medium pieces
  • 1/2 onions, quartered, roasted
  • 1 clove garlic, roasted
  • 5 tomatoes, roasted
  • 2 achiote paste, in bar
  • 1 cup orange juice
  • 1 cup chicken broth
  • 1/2 cups apple cider vinegar
  • 2 black pepper
  • 1 pinch cloves
  • salt
  • banana leaf, roasted
  • corn tortillas, freshly made
  • lard
  • refried beans
  • red onion, pickled
  • Habanero hot sauce

  • Blend the onion, garlic, tomato, achiote, orange juice, chicken broth, apple cider vinegar, black pepper, cloves, and salt for 5 minutes. Set aside.
  • Place the banana leaf on a baking tray, arrange the meat, and pour the achiote sauce over it. Cover with more banana leaf and wrap in aluminum foil.Cook the cochinita pibil in a water bath at 180 °C for 2 hours, making sure the liquid doesn't evaporate. If necessary, add a little more water.
  • Shred the meat and set aside.
  • Separate the freshly made tortillas, opening them slightly to fill them with beans.Heat lard in a skillet over medium-high heat and fry the stuffed tortillas one by one. Remove, place on a plate, and add a bit of cochinita. Garnish with red onion and enjoy with Sidral Mundet® Strawberry – Kiwi flavor.
