Cochinita Pibil Torta

Yucatán is a state that offers incredible dishes, but as good Mexicans, we always create new and equally delicious versions.   • 100 grams achiote, in bar, for marinating
  • 2 tablespoons McCormick® Onion Powder, for marinating
  • 3 allspice berries, for marinating
  • 4 cloves garlic, roasted, for marinating
  • 1 teaspoon Mccormick® oregano, for marinating
  • 1 cup bitter orange juice, for marinating
  • 2 cloves, for marinating
  • 1/4 cinnamon sticks, for marinating
  • 2 kilos pork chump, in medium pieces
  • banana leaf, for marinating
  • 8 telera rolls, for the torta
  • refried black beans, for the torta
  • red onion, pickled, for the torta
  • avocado, for the torta

  • Blend the achiote, McCormick® onion powder, allspice, garlic, McCormick® oregano, orange juice, cloves, and cinnamon stick until you achieve a smooth consistency.
  • Place the banana leaves on a tray, put the meat on top, and pour the marinade over it. Bake the cochinita pibil at 180 °C for 2 hours.
  • Remove the meat from the oven and shred it with tongs or a fork. Then mix it with the rest of the sauce and bake for another 30 minutes.
  • Cut the telera in half, spread with refried black beans and add the cochinita, pickled onions, and avocado.
