  • 8 kilos dough, of Corn (ground corn)
  • 2 butter, clarified
  • 1 vegetable shortening
  • 800 grams Chihuahua cheese
  • 500 grams queso fresco
  • 1 can evaporated milk
  • 2 cups sugar
  • 1 handful salt
  • 2 zucchinis
  • 8 serrano chiles
  • 100 corn husks, for tamales

  • The green chilies are roasted and then placed in a plastic bag to cool, peeled, seeds removed, and cut into strips.
  • In a container of approximately 9 liters where you can put your hands, beat the lard until creamy and without lumps.
  • Butter and lard are added and beaten until well combined.
  • Zucchinis are blended with evaporated milk.
  • To the already beaten lard and butter, add the corn dough, fresh cheese, Chihuahua cheese, blended zucchini, sugar, and salt, and beat everything until all ingredients are well combined.
  • In the Tamal leaves, place a large ladle of the prepared dough and a strip of green chili, wrap them up and place them in a steamer pot, one after another around the pot in a slightly inclined vertical position.
  • They are cooked for approximately one and a half hours.
