Cotija Cheese Patties

  • 2 potatoes, cooked, peeled
  • 250 grams Cotija cheese, ground
  • 2 eggs
  • 4 tomatillos
  • 1 tomato
  • 1/4 onions
  • 1 clove garlic
  • 3 serrano chiles
  • 1/4 bunches cilantro
  • salt
  • pepper
  • vegetable oil
  • 1/2 cups onion, in thin strips
  • peruvian bean

  • Mash the cooked potatoes until you obtain a puree. Add the Cotija cheese and the egg and mix until combined.Form the patties and cook in a pan with enough oil for 3 minutes on each side or until they are lightly golden.
  • Blend the tomatoes, tomatillos, onion, garlic clove, chiles, cilantro, salt, and pepper until you obtain a slightly chunky sauce.
  • Heat a little oil in a pan over medium heat and sauté the onion for 3 minutes. Pour in the sauce and cook for 5 minutes. Add the Cotija cheese patties and cook for 2 more minutes.
  • Serve the potato patties with cheese, drench with the sauce, and accompany with beans.
