Mash the cooked potatoes until you obtain a puree. Add the Cotija cheese and the egg and mix until combined.

Form the patties and cook in a pan with enough oil for 3 minutes on each side or until they are lightly golden. Blend the tomatoes, tomatillos, onion, garlic clove, chiles, cilantro, salt, and pepper until you obtain a slightly chunky sauce.
