Cottage Cheese and Spinach Quesadillas

  • 1 tablespoon olive oil
  • 1/4 cups onion, finely chopped
  • 1 clove garlic, finely chopped
  • 2 cups spinach, in strips
  • 1 cup requesón, low-fat
  • salt
  • pepper
  • 4 Lightest Sanissimo®
  • 1/2 cups pico de gallo, no chili, for accompaniment

  • Heat olive oil in a pan and sauté the onion and garlic. Then, add the spinach, cook for 2 minutes, and incorporate the cottage cheese. Cook on low heat and season with salt and pepper. Set aside.
  • Heat the Ligerissimas Sanissimo® on a griddle over low heat. Fill with the previous preparation and heat for 1 minute on each side until the tortillas are slightly golden.
  • Serve the quesadillas and accompany with pico de gallo.
