  • 1/8 cups árbol chile, for the árbol chili sauce

  • 1 bay leaf, for tomato sauce
  • 1/4 teaspoons cumin, for tomato sauce

  • 1 cup refried beans
  • 2 cups pork carnitas

  • For the árbol chili sauce, heat the water in a small pot over high heat and boil the chiles until soft, strain and set aside. Add the chiles to the blender with the garlic, sesame seeds, vinegar, cumin, marjoram, and salt, blend until you obtain a sauce. Set aside.
  • In a separate bowl, blend the tomatoes with the onion, clove, garlic, oregano, bay leaf, cumin, season with salt and set aside.
  • Heat a small pot over medium heat and cook the sauce for 15 minutes or until the tomato is fully cooked. Set aside.
  • On a board, spread the birotes with refried beans and fill with the carnitas, drizzle with the tomato sauce, and serve with the onions and avocado.
