Dried charal fritters

  • 5 green tomato/tomatillo, boiled, for the sauce
  • 1/4 onions, boiled, for the sauce
  • 1 clove garlic, boiled, for the sauce
  • 1/4 cups cilantro, boiled, for the sauce
  • 1 morita chile, boiled, for the sauce
  • salt, for the sauce
  • cumin, for the sauce
  • 250 grams dried charales, for the fritters
  • 1/2 cups panela cheese, grated, for the fritters
  • 8 eggs, separated, for the fritters
  • salt, for the fritters
  • 1 cup nopal

  • Blend the tomatoes or tomatillos, onion, garlic, cilantro, morita chili, salt, and pepper until you obtain a sauce. Reserve.
  • For the charal fritters: place the charals, panela cheese, eggs, and salt in a bowl. Mix until everything is well integrated.
  • Heat a little oil in a skillet, add a bit of the charal mixture, and cook for 3 minutes on each side. Reserve.
  • Heat oil in a pot, pour in the sauce, and cook for 5 minutes. Add the dried charal fritters and the nopal, and cook for 2 more minutes.
