Drowned Chicken Tacos with Red Sauce

  • 6 tomatoes
  • 3 serrano chiles, (for the sauce)
  • 1/2 onions, (for the sauce)
  • 2 cloves garlic, (for the sauce)
  • 2 tablespoons vegetable oil
  • 1/2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 12 corn tortillas
  • 1 chicken breast
  • 1 1/2 cups vegetable oil
  • 1/2 cups lettuce, chopped
  • 1/2 cups sour cream
  • 1/2 cups red salsa
  • 1/2 cups queso fresco

  • On a griddle, roast the sauce ingredients. Blend for 3 minutes with a little chicken broth.
  • In a small pot over high heat, heat the oil and fry the sauce. Add more broth and let it cook for 5 minutes. Season and set aside.
  • Assemble the tacos by filling the tortillas with chicken and securing them with a toothpick.
  • In a deep skillet, heat the oil and fry the tacos until golden. Drain them on paper towels.
  • Serve and garnish with lettuce, cream, sauce, and cheese.
