Drowned Tacos in Green Noodle

  • 5 tomatillos, roasted
  • 1 Jalapeño chile, roasted
  • 1 clove garlic, roasted
  • 1/4 onions, roasted
  • 1 bunch cilantro
  • 1 tablespoon granulated chicken bouillon
  • 1 cup water
  • vegetable oil
  • 1 cup noodle #0
  • 2 cups water, hot
  • corn tortillas
  • Manchego cheese, in strips
  • sour cream, for serving
  • panela cheese, grated, for serving
  • avocado, for serving

  • Blend the green tomatoes, jalapeño pepper, garlic, onion, cilantro, chicken concentrate, and water. Set aside.
  • Heat oil over medium heat in a deep saucepan, add the noodles and sauté for 5 minutes, stirring constantly, until lightly golden. Then, pour in the previous mixture and cook the green noodles over low heat for 10 minutes. Finally, add hot water and cook for an additional 10 minutes.
  • Place the tortillas on a cutting board, fill with cheese, and roll them up to make the golden tacos. Fry for 5 minutes, place on paper towels to remove excess oil, and set aside.
  • Serve the green noodles with the golden tacos and garnish with cream, cheese, and avocado.
