Shape a ball of dough with your hands, fill it with chicharrón, and close it with your fingers, giving it a round shape. Place plastic on a tortilla press, then put the dough in the center and press gently until you obtain discs of approximately 8 cm. Repeat the process with the remaining dough and filling.
Heat enough oil in a skillet over medium heat and fry the gorditas until they are cooked inside and golden brown outside. Drain on paper towels.
Cut open the chicharrón gordita with a knife from one end to the middle, decorate with cream, cheese, onion, cilantro, and serve with salsa.
