Easy Chimichangas

This easy chimichanga recipe comes from the north to your table! You only need flour tortillas and a mix of meat and beans, then everything is fried in vegetable oil. Prepare this delicious chimichanga recipe, which is very simple to make, you will love it!

  • 2 tablespoons vegetable oil, or olive
  • 1/2 cups onion, finely chopped
  • 500 grams ground beef
  • pinches salt
  • pepper
  • 2 tomatoes, cut into small cubes
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 16 flour tortillas
  • 1 cup pinto beans, refried beans
  • 1 cup Manchego cheese, low-fat shredded
  • 1/2 cups Jalapeño chile, pickled and cut into small cubes
  • vegetable oil, or olive oil for frying
  • pico de gallo, for serving

  • For the filling: Heat the vegetable oil in a saucepan over medium heat and cook the onion until translucent, then add the ground beef, season with salt and pepper, and cook for 6 minutes or until the meat begins to change color. Add the tomato, oregano, and cumin, cook for 10 more minutes, adjust the seasoning, remove from heat and let cool.
  • Prepare the chimichangas: Spread the center of a flour tortilla with refried pinto beans, add a bit of the meat mixture, enough shredded manchego cheese, and pickled jalapeños to taste. Fold the tortilla like an envelope, starting with what would be the sides of the chimichanga, then roll tightly to ensure the ingredients do not come out; you can use a wooden toothpick for support.
  • Heat enough vegetable oil and fry the chimichangas over medium-low heat. Turn them gradually, using tongs, so that each side of the chimichanga gets golden brown. Remove and drain on paper towels.
  • Serve the chimichangas on a flat plate, accompany with pico de gallo and lime to taste.
