Easy Green Pozole with Shrimp

  • 3 liters water
  • 2 tablespoons salt
  • 4 cloves garlic
  • 3 cups hominy corn, pre-cooked
  • 1 kilo pork, chunky
  • 1/4 onions
  • 8 tomatillos
  • 2 serrano chiles
  • 5 sprigs fresh cilantro
  • 2 sprigs fresh epazote
  • 2 cups medium-sized shrimp
  • 1 cup onion, finely chopped, garnish
  • 5 limes, cut into quarters, garnish
  • 1 cup Romaine lettuce, sliced, garnish
  • 1 cup radish, cut into slices, garnish
  • 2 avocados, cut into small cubes, garnish
  • 1/2 cups pork rinds, chopped, garnish

  • Cook the corn in boiling water with salt, garlic, onion, and pork until the corn bursts and the meat is cooked.
  • Blend the tomatoes, chiles, cilantro, and epazote with a little of the corn cooking liquid using the “sauce” function on your T-fal® InfinyForce blender.
  • Add to the corn cooking mixture, season, and cook for 20 more minutes. In the last 5 minutes of cooking, add the shrimp so they do not overcook.
  • Serve the pozole and accompany it with its garnishes.
