Easy Potato and Chorizo Tacos

Try these potatoes with chorizo, as this is a very economical and easy dish to make, which is also full of flavor thanks to the combination of chorizo and potatoes, perfect for a taco party!

  • 1 cup onion, finely chopped
  • 3 cups chorizo, shredded
  • 3 cups potato, in medium cubes, cooked
  • 1/2 cups cuaresmeño chile, in thin strips
  • salt
  • ground black pepper
  • corn tortillas, to accompany
  • Mexican red rice, to accompany
  • pot beans, to accompany

  • Heat the oil in a pot over medium heat, add the onion and cook for 5 minutes. When it is slightly golden, add the chorizo and brown for 10 minutes.
  • When the chorizo is well browned, add the potatoes and the cuaresmeño chili, season with salt, and cook for 5 more minutes,
  • Serve in the same pot and accompany with tortillas, rice, beans, and Sidral Mundet® Apple - Peach.
