Economic alambre for 10 people

  • vegetable oil
  • 2 cups pressed pork rinds, finely chopped
  • 1 1/2 cups onion, in thin strips
  • 1 tablespoon garlic, finely chopped
  • 3 cups pork chops, in medium cubes
  • 2 cups tomato, in strips
  • 2 cups pumpkin, in medium cubes
  • 1 cup Poblano chile, in strips
  • salt
  • 2 cups Oaxaca cheese, shredded
  • corn tortillas, for accompaniment

  • Heat the oil in a pan over medium heat. Add the pressed chicharrón and cook for 5 minutes or until golden. Add the onion, garlic, and chop and cook for 5 more minutes. Finally, incorporate the tomato, zucchini, chili, and salt and cook for 5 more minutes.
  • Add the Oaxaca cheese and cover the pan. Cook over medium heat for 5 minutes and set aside.
  • Serve the alambre and accompany with tortillas.
