Heat the oil in a pan over medium heat. Add the pressed chicharrón and cook for 5 minutes or until golden. Add the onion, garlic, and chop and cook for 5 more minutes. Finally, incorporate the tomato, zucchini, chili, and salt and cook for 5 more minutes. Add the Oaxaca cheese and cover the pan. Cook over medium heat for 5 minutes and set aside.
