Enchilada Trotter Tostadas

The classic recipe is made with precooked and seasoned beef trotter, onion, pickled chiles, beans, and more.   • 3 morita chiles, seedless and veinless
  • 1/4 cups árbol chile, seedless
  • 3 guajillo chiles, seedless and veinless
  • 1 cup water
  • 1 cup white vinegar
  • 1 cup Tomato Sauce for Seasoning EMBASA®
  • salt
  • pepper
  • 1 teaspoon oregano
  • 2 cups cow's feet, in medium cubes and precooked
  • 1 cup onion, in thin strips
  • tostadas
  • refried beans
  • sour cream
  • lettuce, in thin strips
  • queso fresco, crumbled, for garnish

  • Add the morita chiles, árbol chili, and guajillo chili to a pot. Pour in enough water, cook for 5 minutes, strain, and set aside.
  • Blend the hydrated chiles, the cooking water of the chiles, vinegar, EMBASA® Tomato Dressing Sauce, salt, pepper, and oregano for 5 minutes. Set aside.
  • Place the trotter and onion in a bowl. Pour the sauce, cover with plastic wrap, and let it rest in the refrigerator for 4 hours.
  • Spread a tostada with refried beans, add the enchilada trotter, and garnish with sour cream, lettuce, and fresh cheese.
