Enchiladas Mineras

We present to you a typical Mexican snack, the delicious enchiladas mineras, which have a rich red sauce that you will love, and are filled with cooked potato, making them very tasty. We share our secret ingredient: Knorr Tomate® Tomato Seasoning.

  • 1 cube Knorr Tomate® tomato bouillon
  • 4 tablespoons vegetable oil
  • 2 potatoes, cooked and diced
  • 3 carrots, cooked and diced
  • 1/2 teaspoons oregano
  • 6 guajillo chiles, seedless
  • 2 tomatoes, quartered
  • 1/4 onions, white
  • 1 clove garlic
  • 100 grams ranchero cheese, crumbled
  • 1 1/2 cups Romaine lettuce, sliced

  • Heat 1 tablespoon of oil in a skillet and fry the potato with the carrot until golden, sprinkle with oregano and set aside.
  • For the sauce: boil the chiles with the tomato until softened. Blend the mixture with the onion, garlic, the Knorr Tomate® Tomato Seasoning cube, and 1 1/4 cups of the water used to boil the chiles. Strain and cook in a pot over low heat for 5 minutes.
  • Dip the tortillas in the sauce and fry them on both sides in a hot skillet with the remaining oil, filling them with the crumbled cheese to form the enchiladas.
  • Arrange 3 enchiladas per plate, distribute the sautéed vegetable mixture, and garnish with lettuce.
