Fish Quesadillas

Here we present a very traditional fish recipe from the state of Guerrero in Mexico. Delicious fish quesadillas cooked with tomatoes and spices. The pescadillas are fried quesadillas, very tasty. This dish is very versatile, as it can be a rich snack or a main dish.

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, chopped
  • 500 grams tomato
  • 4 serrano chiles
  • 1 leaf dried bay
  • 1 teaspoon ground cumin
  • 250 grams white fish
  • 10 olives
  • salt, to taste
  • pepper, to taste
  • 1/2 kilos corn tortillas
  • vegetable oil, necessary amount

  • Heat the oil and fry the onion until it is transparent; add the chopped garlic.
  • Cook the tomatoes for one minute in a pot with hot water.
  • Cut the tomatoes into small cubes.
  • Incorporate the tomatoes into the onion and garlic mixture. Add the chilies, bay leaf, and cumin.
  • Cut the fish finely and add it. Add the olives, season with salt and pepper, and cook for 5 more minutes. Turn off the heat and let it cool.
  • Heat the tortillas on a griddle.
  • Add two tablespoons of the fish mixture in the center of the tortillas. Fold the tortilla and close it with toothpicks.
  • Fry the pescadillas in enough oil, placing them on paper towels to remove excess grease.
