We present to you a delicious breakfast that won’t take much time to prepare, delicious Fried Eggs with Almond Mole. A traditional Mexican recipe that you and your family will love.
Prepare the mole: In a pot, heat the mole and broth or water. Whisk with a balloon whisk to incorporate the mole into the broth. When it starts to boil and the mole is completely dissolved in the broth, turn off the heat. Do not let it thicken too much
because otherwise, the sauce will be too dry for the eggs.
In a skillet, heat 2 to 3 tablespoons of oil. Brown the tortillas one by one without letting them become stiff. Place them on a paper towel, alternating a tortilla with a paper towel to absorb the excess oil. Arrange the tortillas on a serving platter.
Let the skillet cool for a bit and turn it back on. Add 1 tablespoon of oil and without letting it heat, add 1 egg. (this way it won’t stick) When fried to your liking, place it on a tortilla on the platter. Continue with the remaining eggs, adding more oil if necessary. If desired, use 2 skillets to serve faster.
Reheat the mole.
To serve, drizzle the eggs with mole and sprinkle cotija or panela cheese on top.
