Gizzards in Morita Sauce

  • 1/2 onions, to cook the gizzards
  • 1 clove garlic, to cook the gizzards
  • salt, to cook the gizzards
  • 500 grams sweetbread, clean
  • 4 tomatoes
  • 4 morita chiles, seedless
  • 1/4 onions
  • 1 clove garlic
  • 1 teaspoon oregano
  • 1 cup gizzard broth
  • salt
  • pepper
  • 1 tablespoon vegetable oil, to cook the sauce
  • beans, to accompany
  • corn tortillas, to accompany

  • Heat the water in a pot over medium heat. Add the onion, garlic, and salt. Then, add the gizzards and cook for 30 minutes or until tender. Remove from heat and set aside.
  • Roast the tomatoes, morita chili, onion, and garlic on a hot griddle over medium-high heat until the ingredients are golden. Remove.
  • Blend the roasted ingredients, add the oregano, gizzard broth, salt, and pepper until you achieve a smooth mixture.
  • Heat the oil in a saucepan over medium heat, pour in the morita chili sauce, and cook until it comes to a boil. Adjust the seasoning, add the gizzards, and cook for 3 more minutes.
  • Serve on a plate and accompany with beans and tortillas.
