Golden Beef Tacos in Green Sauce

This version of golden tacos filled with beef has a different flavor due to the sauce; you can use leftover meat from another dish from the week, and making the green sauce will take you no more than 10 minutes. Remember that to prevent the tortilla from breaking, the meat should be moist but not soupy, and don't forget to drizzle a bit more sauce when serving.

  • 1/4 onions

  • 7 tomatillos
  • 4 serrano chiles

  • For the sauce, roast the onion, garlic, tomatoes, and serrano chili; blend the ingredients with beef broth and salt. Set aside and keep some for serving.
  • Heat the vegetable oil in a skillet and cook the beef with the green sauce for 10 to 15 minutes on high heat, until the sauce reduces.
  • For the tacos, fill the tortillas with the meat and roll them up; fry in abundant oil for 5 minutes.
  • Serve the tacos with the reserved sauce, and garnish with cream, cheese, red onion, tomato, and cilantro.
