Golden Tacos Filled with Picadillo

Golden tacos are a way to enjoy taquitos with a different, crunchy texture, and the flavor changes completely. Since you can prepare them with different fillings, this time we'll teach you how to make them with picadillo.   • 2 tablespoons vegetable oil, for the picadillo
  • 2 cups onion, finely chopped, for the picadillo
  • 1 teaspoon garlic, finely chopped, for the picadillo
  • 3 cups ground beef
  • 2 boxes Del Fuerte® tomato purée with chipotle chile, 210 g each, for the picadillo
  • 1 cup carrot, raw and diced, for the picadillo
  • 3/4 cups peas, precooked
  • 1/2 teaspoons oregano
  • 1/2 teaspoons cumin, ground
  • 1 leaf bay
  • salt
  • black pepper
  • tortillas
  • vegetable oil, for frying
  • 1 box Del Fuerte® tomato purée with chipotle chile, 210 g, for the sauce
  • 3 guajillo chiles, clean and soaked, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, small, for the sauce
  • salt, for the sauce
  • sour cream, for serving
  • Romaine lettuces, in strips, for serving
  • queso fresco, grated for serving

Low
  • In a skillet over high heat, heat the oil and cook the onion with the garlic, add the meat and cook for 7 minutes or until it changes color. Add the Del Fuerte® Tomato Puree with chilpotle and cook for two more minutes.
  • Add the carrot, peas, oregano, cumin, and bay leaf; cook until it comes to a boil and then simmer on low heat for 20 minutes, uncovered, or until the liquid has reduced. Let cool.
  • Form the taquitos by filling the tortillas with the picadillo, then heat a skillet over medium heat with enough vegetable oil and fry them for 5 minutes until the tacos are crispy. Drain excess fat on paper towels.
  • For the sauce, blend the guajillo pepper with the onion, garlic, and Del Fuerte® Tomato Puree with chilpotle, heat a skillet over medium heat and add a little vegetable oil, pour in the blended sauce and cook for 5 minutes until it thickens. Set aside.
  • Serve the taquitos accompanied by sour cream, lettuce, fresh cheese, and red sauce.
