Ingredients: 2 tablespoons vegetable oil, for the picadillo; 2 cups onion, finely chopped, for the picadillo; 1 teaspoon garlic, finely chopped, for the picadillo; 3 cups ground beef; 2 boxes Del Fuerte® tomato purée with chipotle chile, 210 g each, for the picadillo; 1 cup carrot, raw and diced, for the picadillo; 3/4 cups peas, precooked; 1/2 teaspoons oregano; 1/2 teaspoons cumin, ground; 1 leaf bay; salt; black pepper; tortillas; vegetable oil, for frying; 1 box Del Fuerte® tomato purée with chipotle chile, 210 g, for the sauce; 3 guajillo chiles, clean and soaked, for the sauce; 1/4 onions, for the sauce; 1 clove garlic, small, for the sauce; salt, for the sauce; sour cream, for serving; Romaine lettuces, in strips, for serving; queso fresco, grated for serving

In a skillet over high heat, heat the oil and cook the onion with the garlic, add the meat and cook for 7 minutes or until it changes color. Add the Del Fuerte® Tomato Puree with chilpotle and cook for two more minutes. Add the carrot, peas, oregano, cumin, and bay leaf; cook until it comes to a boil and then simmer on low heat for 20 minutes, uncovered, or until the liquid has reduced. Let cool.
