  • 800 grams masa harina
  • 300 milliliters chicken broth
  • 100 grams vegetable shortening
  • 300 grams lard
  • 600 grams chicken, thigh and leg
  • 15 grams salt
  • pepper, to taste
  • corn husks, necessary amount
  • 500 grams tomatillo
  • 10 grams garlic
  • 100 grams onion
  • 600 milliliters chicken broth
  • 50 grams serrano chile

  • Soak the totomoxtle (corn husks) in hot water.
  • Cream the two lards.
  • Mix the flour with salt and cold chicken broth.
  • Add the dough to the mixture of the lards gradually.
  • Cook the chicken and shred it.
  • For the sauce: roast the tomatoes, garlic, onion, and green chiles. Blend these ingredients very well.
  • Form the tamales by filling them with chicken and a bit of the green sauce. Steam the tamales for 50-60 minutes or until fully cooked.
