800 grams masa harina
300 milliliters chicken broth
100 grams vegetable shortening
300 grams lard
600 grams chicken, thigh and leg
15 grams salt
pepper, to taste
corn husks, necessary amount
500 grams tomatillo
10 grams garlic
100 grams onion
600 milliliters chicken broth
50 grams serrano chile

Soak the totomoxtle (corn husks) in hot water.
Cream the two lards.
Mix the flour with salt and cold chicken broth.
Add the dough to the mixture of the lards gradually.
Cook the chicken and shred it.
For the sauce: roast the tomatoes, garlic, onion, and green chiles. Blend these ingredients very well.
Form the tamales by filling them with chicken and a bit of the green sauce. Steam the tamales for 50-60 minutes or until fully cooked.
