6 guajillo chiles, rehydrated, seedless and veinless
4 árbol chiles, rehydrated, seedless and veinless
1/4 onions, roasted
2 cloves garlic, roasted
2 tomatoes, roasted
1/2 cups orange juice
1/4 cups apple cider vinegar
1 teaspoon cumin
4 black pepper
1 clove

1 tablespoon lard
1/2 cups onion, chopped

Cook the pork loin with salt, garlic, onion, and bay leaves in a pressure cooker with enough water for 40 minutes. Remove the meat from the pot, place it on a cutting board, and cut it into 1 cm x 1 cm cubes. Set aside.
For the marinade: Blend the guajillo chili, árbol chili, onion, garlic, tomato, orange juice, apple cider vinegar, cumin, pepper, clove, and salt for 5 minutes or until you obtain a smooth sauce. Set aside.
Heat lard in a pan over medium heat, add onion, the meat, and cook for 8 minutes or until slightly browned. Set aside.
To serve the pork loin tacos: Place a warm tortilla on a plate, add two tablespoons of the marinated meat, a bit of onion, and finally, the Fresh Gourmet® crispy Jalapeños. Serve the tacos with lime.
