Ingredients: 1 kilo pork loin, to cook the loin; water, to cook the loin; salt, to cook the loin; 2 cloves garlic, to cook the loin; 1/4 onions, to cook the loin; 2 bay leaves, to cook the loin; 6 guajillo chiles, rehydrated, seedless and veinless; 4 árbol chiles, rehydrated, seedless and veinless; 1/4 onions, roasted; 2 cloves garlic, roasted; 2 tomatoes, roasted; 1/2 cups orange juice; 1/4 cups apple cider vinegar; 1 teaspoon cumin; 4 black pepper; 1 clove; salt; 1 tablespoon lard; 1/2 cups onion, chopped; corn tortillas; onion, finely chopped, for garnish; Fresh Gourmet® Crispy Jalapeños, for garnish; lime, for accompaniment

Cook the pork loin with salt, garlic, onion, and bay leaves in a pressure cooker with enough water for 40 minutes. Remove the meat from the pot, place it on a cutting board, and cut it into 1 cm x 1 cm cubes. Set aside. For the marinade: Blend the guajillo chili, árbol chili, onion, garlic, tomato, orange juice, apple cider vinegar, cumin, pepper, clove, and salt for 5 minutes or until you obtain a smooth sauce. Set aside.
