Habanero Tamales

  • 8 tomatillos, for the sauce
  • 4 Habanero chiles, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1 teaspoon cumin, for the sauce
  • 1 1/2 cups lard, for the dough
  • 4 cups masa mix for tamales, for the dough
  • 1 1/2 cups water, for the dough
  • 1 teaspoon baking powder, for the dough

  • 20 corn husks
  • 2 cups pork chump
  • green onion, pickled, for presentation
  • Habanero chile, for presentation

  • For the sauce: roast the tomatoes, chiles, onion, garlic, and cumin on a griddle. Set aside.
  • Blend the sauce ingredients in your Oster® blender until smooth, season with salt and pepper. Set aside.
  • For the dough: in a bowl, beat the lard with your Oster® Heatsoft hand mixer until the lard is softened, gradually add the water, then the baking powder and salt until you have a homogeneous and light dough.
  • Place a tablespoon of dough, a tablespoon of sauce, and the pork meat on each corn husk; wrap to form a tamale.
  • Place the rack accessory in your Oster® pressure cooker, add water, place the tamales, and cover by turning the pressure valve. Press the 'steamer' function, set the time for 30 minutes, and start the process.
  • When your Oster® pressure cooker finishes and beeps, let the tamales rest for 10 minutes, then gently open the steam valve and remove the tamales.
  • Enjoy, accompanied by pickled onions.
