  • 1 cup canned pineapple, in cubes, for the filling
  • 1 cup Manchego cheese, in cubes, for the filling
  • 1 tablespoon chipotle chile in adobo sauce, for the filling

  • For the dough: Beat the flour, shortening, butter, cold water, and salt in a mixing bowl with a kneading attachment until everything is combined and you have a smooth and homogeneous dough. Place the paste dough in a bowl, cover with plastic wrap, and let it rest at room temperature for 30 minutes.
  • Mix the ham, canned pineapple, Manchego cheese, and chipotles in a bowl and set aside.
  • Roll out the dough on a floured surface, cut circles with a diameter of 15 cm, and fill the circles with ham, cheese, and pineapple. Close the paste by pressing with your fingers.
  • Place the pastes on a baking tray lined with parchment paper, brush with egg, and bake the Hawaiian pastes at 180 °C for 30 minutes. Set aside.
  • Serve the Hawaiian pastes and accompany with chipotles in adobo.
