Homemade Al Pastor Meat

A delicious recipe for Al Pastor meat, perfect to enjoy with family and friends. This recipe is ideal when you have many guests at home, as it is easy and very yielding.

  • 1 kilo beef cutlet, pork
  • 3 guajillo chiles
  • 1 stick achiote
  • 1/4 white onions
  • 2 garlic
  • 1/2 cups vinegar
  • 1/2 cups orange juice
  • 1 1/2 tablespoons dried oregano
  • salt, to taste
  • pepper, to taste
  • 1/4 cups soy sauce
  • 1/2 pineapples, in cubes
  • 1/2 onions, sliced
  • 1 sprig fresh cilantro

  • Take your meat and cut it into pieces, placing it in a clean container. Add salt, pepper, soy sauce, and if you can, a bit of garlic powder, which is optional. Let it rest for about half an hour.
  • In a skillet, add a splash of oil and fry the deveined guajillo chiles just until they change color slightly, the onions until they turn brown and soften, and the garlic cloves. Place the above in the blender, along with the vinegar, orange juice, the adobo, and the oregano, and blend perfectly until all ingredients are disintegrated.
  • Pour the mixture over the meat and stir well until all the meat is covered, then let it rest again for 30 minutes in a refrigerator.
  • In a clean skillet, add a splash of oil and fry the meat, stirring constantly. When the meat is about 3/4 cooked, add the diced pineapple and sliced onion until the meat is perfectly cooked.
  • Remove from heat, serve hot, and sprinkle finely chopped cilantro on top.
