Ingredients: 1 kilo beef cutlet, pork; 3 guajillo chiles; 1 stick achiote; 1/4 white onions; 2 garlic; 1/2 cups vinegar; 1/2 cups orange juice; 1 1/2 tablespoons dried oregano; salt, to taste; pepper, to taste; 1/4 cups soy sauce; 1/2 pineapples, in cubes; 1/2 onions, sliced; 1 sprig fresh cilantro

Take your meat and cut it into pieces, placing it in a clean container. Add salt, pepper, soy sauce, and if you can, a bit of garlic powder, which is optional. Let it rest for about half an hour. In a skillet, add a splash of oil and fry the deveined guajillo chiles just until they change color slightly, the onions until they turn brown and soften, and the garlic cloves. Place the above in the blender, along with the vinegar, orange juice, the adobo, and the oregano, and blend perfectly until all ingredients are disintegrated.
