Homemade Carnitas

  • 2 cups lard, in cubes
  • 1 kilo pork loin, whole
  • 1 kilo pork ribs
  • 1 cup orange juice
  • 1 cup evaporated milk
  • herb bundle
  • 4 cloves garlic
  • 1/2 onions
  • 1/4 cups salt
  • corn tortillas
  • onion, for garnish
  • cilantro, for garnish
  • lime, for serving
  • salsa, for serving

  • Add the lard to a clay pot and let it melt over medium heat. When melted, add the meat and cook for 10 minutes or until the meat changes color.
  • Add the orange juice, evaporated milk, herbs, garlic cloves, onion, and salt to the same pot. Cook over medium heat for 1 hour. Then, strain and let cool.
  • Chop the carnitas into medium cubes on a wooden board.
  • Place two corn tortillas on a plate, add some homemade carnitas on top, garnish with onion and cilantro, and serve with lime and salsa.
