Homemade Chicharrón in Green Sauce

  • 10 tomatillos, cut into quarters
  • 1/2 onions
  • 2 cloves garlic
  • 5 serrano chiles, cut in half
  • 1 bunch fresh cilantro
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • salt

  • 5 cups pork rinds
  • corn tortillas
  • beans, from the pot to accompany

  • In a medium pot, heat the oil and fry the tomatoes, onion, garlic, serrano chiles, and cilantro; pour in the chicken broth and cook for 10 minutes, or until cooked through.
  • Blend the tomatoes with the chicken broth.
  • Heat the oil over medium heat, pour in the sauce, season with salt, pepper, and cook for 10 minutes.
  • Add the chicharrón and cook for 5 more minutes. Serve with tortillas and beans from the pot.
