  • In a pot, boil water with salt. Add the tomatoes, onion, garlic, and chiles and cook for about 5 minutes.
  • Blend the sauce ingredients with the cilantro for 3 minutes.
  • Heat a pot over medium heat, pour in some oil and the blended sauce. Cook for 3 minutes and season with salt. Reserve.
  • Heat a skillet over medium heat, pour in some oil, and briefly fry the tortillas in the oil for 30 seconds. Immediately fill with chicken and arrange on a plate.
  • Pour the enchiladas with hot green sauce and serve with cream, onion, and aged cheese.
