Huauzontles Filled with Ricotta and Tomato Sauce

  • 400 grams huauzontle
  • 2 liters water
  • 2 tablespoons salt
  • 4 egg whites
  • 4 egg yolks
  • 2 tablespoons flour
  • 1 cup requesón
  • vegetable oil, for frying
  • 6 tomatoes
  • 1/2 onions
  • 1 clove garlic
  • 3 serrano chiles
  • salt
  • pepper
  • 1/2 cups Del Fuerte® tomato puree
  • 1 teaspoon oregano
  • fresh cilantro, for decoration
  • beans, for accompaniment

  • Remove the stem from the huauzontles and leave only the sprouts.
  • In a pot with water and salt, add the huauzontles and cook until tender. Strain and set aside.
  • For the batter, beat the egg whites until stiff peaks form, add the yolks and the flour.
  • On a board and with the help of your hands, shape patties, fill with the ricotta, cover with the batter, and fry until golden brown.
  • For the sauce, blend the tomatoes, onion, garlic, and chiles, seasoning with salt and pepper. In a small pot, fry the sauce, add Del Fuerte® Tomato Puree and oregano. Cook for 15 minutes.
  • Serve the patties with the sauce, garnish with cilantro. Serve with beans and enjoy.
